There’s nothing quite like a thick slab of fruit loaf with a steaming mug of tea. Especially when you’re chained to your desk writing a thesis. I really adore this loaf because it is so moist, so filling and so downright rich you don’t even notice that it’s vegan.

Whenever I bake cookies I always seem to end up raving about how much I love baking cookies… and this post is no exception! These biscuits really are great, especially because they are soooooo flexible. You can add whatever you want, and you can make the dough in advance, and just bake ’em when you’re ready! When I made these, I prepared the dough on the weekend (which really doesn’t take very long) and kept it in the fridge so on a weeknight I could quickly whip up fresh cookies to take to work the next day. As an avid baker with a father with a severe egg allergy, I have baked many a Crazy Chocolate Cake in my time. I guess the reason it’s called ‘crazy’ is that the recipe is dairy-free and egg-free. In today’s world it probably needs to be gluten-free too, to cover all bases.
The recipe I’ve used for most of my life came from a hospital fundraising cookbook, and was okay, but nothing too special. I recently stumbled upon this recipe from Chelsea Winter and was intrigued. How’s everyone doing? I’m enjoying being back on the blog and loving the sudden introduction to spring we’ve gotten lately! The weather has been absolutely gorgeous, we’ve put our clocks forward so we’re getting sunny evenings, and the supermarket shelves are starting to fill up with my favourite summer produce at reasonable prices!
