Mint Chocolate Brownie

Welcome back… to you and to me!

It has certainly been a bit of a hiatus since my last blog post. It was not really intentional, and it didn’t reflect a lack of baking, but rather an increasing devotion of all my writing energy towards my thesis. But I’m very pleased to say that I submitted that beast in February, and then spent the following month and a half in the UK/Europe. My husband was temporarily working in Hull, and we travelled to Edinburgh, Dublin, York, London and Lisbon. It was a fantastic trip and I have been inspired to try and bake some of the delicious treats I ate over there.

Spiced Mexican Brownie

Guys… I have something very exciting to share. I actually think this is one of the best brownie recipes I’ve ever baked. It’s a big call, I know. But this one is good, oh so good! It’s chocolatey (but it doesn’t even need melted chocolate!), sweet (but perfectly balanced with spice!), cakey (but still chewy!)… mmmmm, I am very pleased. Peanut Butter and Chocolate Brownie

With all this baking I’ve been doing, I’ve found myself running out of key ingredients, like butter and icing sugar. Unfortunately, I still find myself with the compulsion to bake, but no desire to dash to the supermarket. The good news is, you can still make delicious brownies without butter!
